Controlled atmosphere packaging “CAP” (Controlled Atmosphere Packaging) can be defined as “closing a packaging product impervious to gas in the reference gas as CO2, O2, N2 and water vapor have changed and are selectively controlled”.This method of packing is less common in commercial practice. Changing the atmosphere inside the package is obtained by the following methods:- Vacuum packaging;- Modified atmosphere packaging.Modified atmosphere packaging MAP (modified atmosphere packaging) is the closure of the product in a package inside the atmosphere is changed (in relation to CO2, O2, N2, water vapor).Applying this method allows control of chemical reactions, enzymatic or microbial processes to reduce or eliminate the damage of goods. This technique is also used with packaging some food products with ziplock bags.The main purpose of introducing nitrogen (N2) which replaces oxygen is to reduce fat oxidation. Nitrogen is inert, odorless and slightly soluble in water and fat.
